As I told you a few days ago (actually I don’t remember when, it’s age my poor Lucette), poached chicken breasts (click for recipe) is top for salads . Here with an avocado , tomatoes
cherries and a little lemon olive oil sauce it’s great!
For 1 person (complete dish) or 2 (nice small starter)
For the sauce :
2 tablespoons of lemon juice
4 tablespoons of olive oil
1 teaspoon short of garlic semolina (or 1 small chopped clove of garlic)
1 pinch of salt
1 pinch of pepper
1h30 before (or the day before) : Cook your chicken breast as in this recipe : Poached chicken breast (click).
At lunch time, prepare the salad dressing: In a bowl, put 1 pinch of salt, 1 pinch of pepper, add the lemon juice and pour the olive oil. Emulsify slightly.
In the serving dish, place the sliced chicken breast. Wash the tomatoes, cut them in half and put them with the chicken. Split the avocado in half.
