I went to Key West by chance.
Student I stayed with my future husband a few months in the USA. I took the opportunity to see the country thanks to a special plane ticket called a pass. I don’t know if it still exists today but at the time you bought this ticket and then from the day you started using it, you could fly as many times as you wanted for 30 days. You were on stand-by, that is to say that you got on the plane only if there was room, but at that time there was almost always room. In the worst case you would take the next flight. It cost about 2000 francs (300 euros) and I can tell you that we have paid it off.
All those in my class did the same, and one day, meeting a friend in an airport, she said to us:
You should go to Key West, it’s great.
And that’s how we boarded for Key West with only a vague idea of the destination :p On arrival youhou, the paradise on earth between Florida and Cuba.
If I talk to you about Key West, it’s because there you can find small limes, the Key limes . And it is with them that we usually make the Key lime pie , the classic lime pie of American cuisine.
Obviously it is not found here. You can use limes, or Pulco lime, that works too.
- For the crust I used Petits-beurre but you can replace them with speculoos, it’s also very good.
- With or without meringue? Personally I made it without but I decorated it with a little whipped cream and lime zest. Then make according to your taste.

For 1 pie (30 cm diameter mould)
- 300 g of small – butter
- 150 g of butter
- 1 can of sweetened condensed milk (397 g)
- 3 eggs
- 120 ml of lime juice (about 4 fruits) or 150 ml of Pulco lime
- 1 lime (for the zest)
Preheat the oven to 180°C, rotating heat.
Put the butter biscuits in the food processor bowl and mix. Melt the butter and add it to the cookie crumbs. Mix again.
Pour this mixture into a pie tin lined with baking paper. Press well to form a crust.
In a bowl pour 3 eggs and a can of sweetened condensed milk. Mix well.
