
This is the first time I make a
velvety cauliflower . I usually make gratins (from my cauliflower my dear) because children like it, especially if I put bacon or chorizo in it. But here, I wanted a velvety . To add a bit of crunchiness, I chose to top it with small grilled bacon, well drained. A delight!
You need for 8 persons (or for 2 meals of 4 persons)

cauliflower
(750 g of flowers once the cabbage is washed)
- 3 medium potatoes (175 g)
1 liter of 12 skim milk - 1 cube of poultry or vegetable broth
- 100 g of smoked bacon

Remove leaves and large ribs from cabbage flower. Wash the flowers and drain them. Peel and wash potatoes. Cut them coarsely. Put the cabbage flowers, the potato pieces, the chicken stock cube in a casserole dish and moisten with the milk.
Preparation of the velouté
Let it boil for about 30 minutes and then mix with the blender.

Meanwhile grill the bacon in a dry frying pan.
