Roasted scallops and rice pudding with coconut milk, curry and lemongrass

Pour 2 tablespoons of olive oil in a wok.  Heat, add the rice and cook for 2 to 3 minutes until it becomes pearly. Moisten with 300 ml of water and leave to boil for 11 minutes (adapt to the rice according to what is noted on the package.).

Meanwhile prepare the sauce. Peel the shallots and garlic cloves and dice them. Peel the ginger and also cut it into cubes.

Wash the cherry tomatoes and cut them in half. Split the lemongrass stick in half and crush it lightly for a better diffusion of the aromas.

Pour 2 tablespoons of olive oil in a frying pan. Heat and when it is hot, add the diced shallot, garlic, ginger and cherry tomatoes. Fry on a fairly high heat for 5 minutes. At the end of this time, remove the tomato skins, the chilli pepper and the lemongrass stick and keep warm while the scallops are cooking.

Au bout de 5 minutes de cuisson Pour 2 tablespoons of olive oil into a frying pan. Heat over high heat. Sear the scallops for 2 minutes on one side, 1 minute on the other.  Turn off the heat and leave the scallops in the pan to set.

Place the rice in a bowl, add the sauce and top with the scallops. Sprinkle with a large pinch of chopped coriander (or parsley) pluches.
