Usually, I beat the eggs into an omelette in a salad bowl and cook it. On their site, they put the whole eggs in the frying pan and mix inside.

For 2 persons
- 4 eggs
- 10 g of butter
- 1 tablespoon of whipping cream
- 1 pinch of salt
- 1 pinch of pepper
- 3 teaspoons of chopped chives
Melt the butter in a non-stick pan over medium heat. Break the eggs in the pan and season with salt and pepper. Continue to cook over medium heat, stirring regularly with a maryse (click if you don’t know).
Cook for about 5 minutes. Just before the end of the cooking time, add the whipping cream, stir and cook for another 30 seconds.
Serve on plates and sprinkle with chopped chives.
