Pomme de terre au four crème et ciboulette

Cream baked potato and chives

It’s so good the potatoes in the oven also called potatoes in field dress or in dressing gown. When they are well cooked, their flesh is soft and their skin crispy. It’s really easy to prepare, you just have to choosing the right potato variety. I recommend you for this recipe the Samba potatoes or Agata potatoes.

To serve them, you can accompany them with cream fresh and chives as here, crispy bacon or smoked salmon (for non-vegetarian versions), flavoured butter, grated cheese etc.

For 4 people

Preheat the oven to 180° C, rotating heat.

Wash and dry the potatoes. Wrap them in aluminum foil. I use it here because the inside of the potato (that we eat) is protected by the skin of the potato. So for me it’s OK for the aluminum.

The potatoes are wrapped in aluminium foil.

Place the wrapped potatoes on a baking sheet.

Bake for 1 hour.

Meanwhile, chop the chives.

Just before serving, remove the tinfoil, split the potato in two, add one tablespoon of fresh cream and one teaspoon of chives per potato. Sprinkle with a little fleur de sel.
