After trying Parampara spice concentrate to make Shahi Korma chicken I wanted to continue my encounter with the Indian cuisine with this time the kit for chicken Tikka massala. In addition to the spice mixture, it contains mango chutney and fragrant rice.
All in one what. Super convenient and just as delicious.
You need for this recipe for 4 persons :
- 500 g of white of chicken farmer red label
- 100 g of Greek yoghurt (I put 1 yoghurt is 150 g)
- 50 ml full cream
- 3 tablespoons of olive oil
- Chicken tikka massala kit containing rice, spices, chutney, etc.
- 1 tablespoon chopped coriander or parsley
Brown the rice in a frying pan over high heat with 2 tablespoons of olive oil for 1 minute.
Add 650 ml of water and bring to a boil. Then lower the heat and cook the rice until it has absorbed all the water (15 minutes), stirring regularly. Keep warm.
Cut the chicken into cubes of about 3 cm side.
In a bowl with a whisk, carefully mix the spice paste with 200 ml of hot water and the Greek yoghurt to obtain a sauce.
Brown the diced chicken for 3 minutes in a frying pan over high heat with 1 tablespoon of olive oil. Pour the sauce into the pan, stir and bring to a boil. Cook for 11 minutes over low heat, stirring regularly, until the sauce thickens and the chicken is cooked.
Add the cream and bring back to the boil. It is ready to use. I added a few cilantro plumes just before serving.
All you have to do is enjoy it with the chutney.
It’s spicy, a little spicy but not too much and the chutney softens the whole. We found this recipe very nice and very easy to make. We travel in the plate!
