I like these salads summer sweet and salty. They are full of freshness, vitamins but nevertheless nourishing. Moreover it is beautiful in the plate #Autocongratulation. If you haven’t succumbed to quinoa (I live in Boboland, I couldn’t help it), use couscous semolina, it will work very well too.
For 2 persons
and for seasoning :
- 1 pinch of salt
- 1 pinch of pepper
- 1.5 tablespoons of lemon juice
- 3 tablespoons of olive oil
Rinse the quinoa with plenty of water in a very fine sieve. Pour into a saucepan, add the water and the quinoa. Bring the water to the boil, cover and lower the heat. Simmer gently for 15 minutes. Drain and set aside until it cools. This step can be done in advance.
Prepare the seasoning : In a bowl, place 1 pinch of salt, 1 pinch of pepper, 2 tablespoons of lemon juice and lightly emulsify 4 tablespoons of olive oil.
Using a Parisian spoon, collect a dozen melon balls. Wash the nectarine and cut it into strips. Wash the basil, dry it and chop it. Peel the onion and cut it into small cubes.
All you have to do is pour the salad dressing into the quinoa, add the diced onion and mix. Decorate with the nectarine strips, melon balls and sprinkle with a few chopped basil leaves.
