I like these salads salads that bring a bit of freshness before continuing with a small simmered dish for example or before or after a soup. This one combines avocado, grapefruit, pomegranate and parsley. I hope you will enjoy it as much as we do.
and for the sauce :
- 2 tablespoons lemon juice
- 1 pinch of salt
- 1 pinch of pepper
- 5 tablespoons olive oil
Prepare the seasoning: In a bowl, put a pinch of salt, a pinch of pepper. Add 2 tablespoons of lemon juice and emulsify lightly while pouring in the olive oil.
Peel the grapefruits. Remove the supremes and cut them in half. Split the avocados in half, remove the flesh and dice it. Mix avocados and grapefruit in the sauce. Add the pomegranate seeds and chopped parsley. Mix and serve immediately.
