I think I’ve already told you, but since I went to Finland this fall, I’ve been having a crisis celery root. I ate some great soups and since then I’ve been testing a lot of them at home. This one is a simple celeriac and potato soup to which I added a lot of garlic and onions. It was very good!
For 2 times 4 people (soup for 4 for 2 days, or even 3 depending on appetite)
- 1 celery root
- 600 g of potatoes
- 3 onions
- 6 cloves of garlic
- 1.2 liters of chicken or vegetable stock (homemade or reconstituted with a cube)
- 2 tablespoons of olive oil
Peel celery root and potatoes. Cut into large cubes.
Peel the garlic cloves and onions. Chop fairly finely.
In a casserole dish, pour the olive oil. Fry the diced garlic and onion for about ten minutes. Then add the celery and potato cubes.
Mix, then moisten with the chicken stock. Cook for about 30 minutes. The celery and potato pieces should be tender. If not, cook for 10 minutes longer and if necessary add up to 250ml of chicken stock.
