You will enjoy these delicious chocolate pecan muffins. Not only are they great, but they are easy to make and the recipe takes very little time. In short, they have all the qualities and will be perfect on this Sunday of Easter. I had a few small Smarties left over that I used as decoration but it’s optional.
For 12 muffins you need :
- 300 g of flour
- 1 sachet of baking powder
- 125 g powdered sugar
- 1 pinch of salt
- 2 heaped tablespoons of unsweetened cocoa powder (Van Houten type)
- 150 g of dark chocolate crushed into small pieces (or chunks)
- 100 g of pecan nuts coarsely crushed
- 25 cl of milk
- 2 eggs
- 75 g melted butter
Preheat the oven to thermostat 6 (180°C).
Place the paper cases in the muffin tin or butter the moulds.
Pour the flour, yeast, sugar, salt and unsweetened cocoa into a bowl.
Add the dark chocolate and pecan pieces and mix.
Melt the butter. Add the beaten eggs and the milk.
Pour this liquid mixture over the dry ingredients and mix, but not too much. The dough should be just combined.
Divide the mixture among the 12 muffin cups with a large spoon and bake for 25 minutes.
Enjoy cold, or even lukewarm.
