Gluten-free and dairy-free raspberry muffins

This muffin is moist, light and yet you won’t find any fat in the list of ingredients. Incredible but true, this muffin was unanimously approved by all my testers. Anti-rice flour, anti-soy, chocolate fundamentalists, all were seduced by this simple but delicious recipe.

Do you have 30 minutes to spare? Perfect, that’s how long it takes to make them.

Ingredients for 7 muffins (no more or they will be flat)

Combine all dry ingredients in one bowl and all liquid ingredients (except fruit) in another (mix milk and egg well).

Quickly mix the 2 contents. Grease a muffin tin if it is not silicone, put a tablespoon of batter then raspberries and cover with the batter. Sprinkle with slivered almonds.

Bake in a hot oven for 20-25 minutes, thermostat 6-7 (210°C)
