I’m on the road a lot these days. As a result, I don’t have much time to go shopping and I have to manage with the ingredients in my cupboard. So we eat a lot of dried vegetables. Today it was lentils with sweet spices. It’s amazing how well cumin or cinnamon go with them. Try it and let me know if you like it too.
Wash and peel the carrots. Split them in half and cut into small cubes. Peel the garlic and onion and chop them. Rinse the lentils in cold water and drain. Wash the bay leaf.
Pour 2 tablespoons of olive oil in a frying pan. Brown the chopped onions for 3 to 4 minutes. Add the tomato paste, garlic, bay leaf and spices (cumin, turmeric, cinnamon, chilli, coriander). Mix. Then add the drained lentils and the diced carrots.
Moisten with 1 liter of water. Bring to a boil and then cook gently at a very low boil for 40 minutes. The cooking time and the quantity of water can be slightly modified according to your utensils. Taste to ensure proper cooking.
Just before serving, salt, stir and enjoy.
