For one pie :
Preheat your oven to 220°C (fan oven).
Peel and dice the rhubarb. Line your pie pan with the dough. Scatter the rhubarb pieces over the pastry.
Whisk the eggs and sugar until the mixture becomes frothy. Add cinnamon and cream and mix.
Cover the rhubarb pieces with this preparation and put them in the oven immediately. Bake for 30 minutes.
