Low heat pork roast

You need :

Combine olive oil, herbes de Provence, ginger and 4-spice in a bowl.  Brush over pork roast. Sear it over high heat for 2 minutes on all sides to color it and get a nice crust. Deglaze the juices with 200 ml of water.

Preheat oven to 100°C.

Put the pork in a dish, add its juice. Push a probe into the heart of the pork and when it reaches 68°C, it is cooked. It takes about 3 hours to cook.

If you want to serve it on a bed of potatoes to make a complete dish 8673: Peel them and cook them in water. When they are cooked, take the casserole out of the oven, remove the pork roast, put the potatoes in the casserole, mix with the sauce and put the roast back in. Cover and put the potatoes in 45 minutes before the end of the cooking time (in this case, add a little liquid, about 200 ml of vegetable or poultry stock for example).
