Tips for brightening up sweet and savory pies

We all make sweet or savory pies and I wanted to ask you on Facebook what tips and tricks you have for customizing your preparations, making them more gourmet or more original. Thanks for all your answers.

Tips for brightening up the dough :

  • Add spices for color and taste
  • Include small seeds: sesame, poppy, cumin…
  • Don’t forget the dried herbs: rosemary, thyme, ….
  • Or citrus peels (oranges, lemons)

It can also be spread for flavor: 

  • with mustard for classic tomato or tomato and tuna pies
  • with a little melted white chocolate for a blueberry pie
  • with a little honey, quince jelly or compote for apple pies
  • with chopped spinach for a salmon pie
  • with Parmesan cheese for a little Italian flair.

For the trim :

We perfume the migaine Do you know the word migaine? It is a preparation of eggs and whipping cream, the basis of the quiche Lorraine. For a savory or sweet pie, you can sprinkle your filling with a mixture of 2 or 3 eggs and 20 cl of liquid cream.

You can add tomato pesto, onion jam, pieces of cheese for savory pies, vegetable coulis or purée, and for sweet pies, cocoa, pistachio paste, etc. You can also replace the liquid cream with unsweetened condensed milk for a lighter but just as good result.
